Creamy apple tiramisu without egg

Tiramisu is like apples, right? I really don’t know anyone who doesn’t like this delicious and creamy dessert! How cute that you can combine this love of two things and then turn it into a great eggless apple tiramisu, which is not only nice and creamy but also particularly fruity! I really like this combination, because it is not that powerful either.



In fact, I planned this wonderful dessert recipe for my book “Delicious Baked with Apples” *, but it turned out to be a tiramisu in a glass. That’s why I can serve you this famous dessert here today! Not only is apple tiramisu incredibly tasty, it’s great to make and the amount is good for 8-10 people. So of course it’s perfect for a larger group or as a laid back Christmas dessert.

By the way: this recipe works really well with pears too, if you prefer!

Apple dough:

500g apples

3 tablespoons brown sugar (or more if you like, if the apples are very acidic) 200 ml apple juice 50 ml calvados (can be replaced with apple juice if children are eating, but also overcooked!) 2 cinnamon sticks

500 g of whipped cream

250 g of mascarpone

60 g icing sugar

1 teaspoon vanilla extract

200 ml of cold espresso

3 tablespoons amaretto (you can also buy it without alcohol)

250 g sponge cakes

Peel, cut into eighths, remove the core and cut the apples into small pieces. Put the juice, sugar, calvados and cinnamon in a small saucepan, heat and bring to a boil briefly, when the apples are soft, turn off and allow to cool. (You can do it the day before!)

Beat the cream until firm, stir in the mascarpone, sifted powdered sugar and vanilla until creamy, add the cream and refrigerate.

Mix the coffee with amaretto in a bowl and dip half of the biscuits for a moment. Then place them next to each other in the mold. Spread half the cream on top, then sprinkle the chilled apple mixture on top. Also dip the remaining cupcakes in the coffee mixture, place on top and drizzle the rest of the cream on top or spread it in waves.

Place the tiramisu in the refrigerator for at least 3 hours. Sprinkle with thick cocoa before serving.
