Try this light version of the classic potato salad!
Quantity: 4 portionskcal / person: 133 kcalPreparation time: 35 minRecipe type: VegetarianIngredients and quantities: – 2 potatoes, 3 white beets, 1 egg, 1/4 celery, 1 red pepper, 1 green pepper, 1 onion, 1 tablespoon of mustard, 4 tablespoons of light mayonnaise, water and salt
preparation: 1.) First you have to cook the potatoes in salted water, allow to cool and cut into small cubes. 2) Then peel the white beets, cut them into small cubes and blanch. 3) Chop the celery, bell peppers and onions, boil the hard-boiled egg and also cut it into small pieces 4.) Mix all the ingredients in a bowl and add a little water if necessary 5.) Keep the finished potato salad in the refrigerator until serving time. Enjoy your meal!
