Quark Mandarinen Blechkuchen

A few years ago I already sold the quark and tangerine cake. But that was quite a long time ago. Also, many new readers have joined over the years. And because cake is still one of our favorite birthday surprises, I’ll tell you about the recipe again today and hope to encourage you to bake it. =)


For the mass

  • 100g soft margarine / butter
  • 200g sugar
  • 2 eggs
  • 375 grams of flour
  • 2 teaspoons of baking soda
  • 1-2 packets of vanilla sugar

To cover

  • 1 kg quark
  • 275 g sugar
  • 1 packet of vanilla sugar
  • 4 eggs
  • 100 ml oil
  • 200 g sour cream
  • 300 ml milk
  • 1 package vanilla pudding powder (I always use Dr. Oetker’s for cooking)
  • 2-3 cans of high-quality, sweetened mandarin oranges
  • Cake topping, of course

When you have all the ingredients together, you can start!

The cake is really quick and easy to make and aside from the ingredients you really don’t need a lot of baking knowledge. =)


First you put all the ingredients for the dough in a baking bowl and knead everything. The dough should be very soft so that it can be easily rolled out on the baking sheet later.

Note: I always use an extra baking sheet that is a little smaller than the oven baking sheets. It can also be adjusted in length. If you want to make the cake on a regular baking sheet, use 1.5 times the amount of ingredients.

Before rolling out the dough, you need to grease the baking sheet and sprinkle it with a little flour.

I always use a round glass to roll out the dough. Then do the fine work with your hands and press the dough evenly to all corners and edges.


Then get on with the coverage! You can preheat the oven to 190 ° C at this point.

For the topping, you also put all the ingredients you need (except the tangerines and the cake glaze, of course) in a baking bowl and stir everything.

Then you put the finished curd mixture on the previously spread dough. In terms of quantity, it will certainly seem like a lot, but the quantity is perfect, don’t worry!

Next, spread the tangerines on the cake. Either neat or in a mess or “back to back” then they look like little butterflies. =)

We just did both. =)

Tip: Use high-quality brands for mandarins, because I’ve always had bad experiences with cheap canned mandarins.


As soon as the cake is finished, you push it to 35-45 minutes at 190 ° C circulating air In the oven. Make sure to keep an eye on it so it doesn’t get too dark, but stays nice and juicy!

After baking, pour the clear cake frosting over the cake and your mandarin and quark leaf cake is ready.
