When I think of eggnog cake, the memories of my own children’s birthdays come back. Because I loved eggnog cake as a girl and always wanted it for my birthday. At the time, hardly anyone thought about whether the alcohol would completely dissipate during cooking or not. And somehow, opinions are still divided today. But if you want to do without alcohol in your cake in relation to children, you can make an alcohol-free eggnog yourself. That happens in no time. You can find countless recipes for this on the internet. =)

Today’s recipe is mine. I kept modifying it a bit until the cake tasted perfect. I love eggnog cake!

  • 250g soft butter
  • 180g sugar
  • 250 g flour
  • 1 packet of vanilla sugar
  • 1 package baking powder
  • 4 eggs
  • some aroma of rum
  • 150g chocolate chips
  • 75ml of espresso
  • 50g of almond leaves
  • 300g chocolate coating

And since I’m not entirely sure about the alcohol thing, these days I always do it to have a large egg liqueur cake. With Bake the alcohol, but remove a small portion of the batter before adding the egg liqueur and mix some milk instead of egg liqueur into this portion filled like a liquid. Then I fill it all up on a kid’s baking sheet. So in the end there is a cake for adults and another for children. =)


But now let’s get back to the actual recipe:

First, beat the softened butter with the sugar and vanilla sugar until frothy.

Then add the flour and baking powder, the eggs and the rum flavor. Immediately after, add the chocolate chips. If you prefer the cake a bit tart, you can use grated dark chocolate instead of the crumble.

(For the children’s cake, take a serving of dough from the large bowl and add 3-4 tablespoons of milk.)

Finally, the egg liqueur is added to the dough. And then everything is fine again.

The finished batter comes in a greased Guglhupf skillet dusted with flour and then placed in the preheated oven. 155 ° C circulating air for about 50-60 minutes golden yellow baked.

After baking, the cake needs to cool down and can then be thrown out on a wire rack.

Once it has cooled down well, you can toast the almond leaves and melt the topping at the same time. This is then evenly distributed on the cake. The toasted almond leaves are immediately sprinkled on top.

In the end, only the icing on the cake should set.

And then you can finally enjoy the delicious result. =)

For me, this variant of the eggnog cake is very typical of Easter. Because the chocolate, eggnog, and toasted almonds give the cake a really festive flavor.
