Today there is again after the wonderful vegan week – a completely normal one “Bake Together – the baking surprise” from Marc aka Bake to the roots and me. Today’s topic is “potatoes.” Since I didn’t really want to give you the recipe for French fries or French fries here, it should actually be a very tasty potato bread first…. However, then I realized that we will have Easter soon and then I thought it was more suitable for you. Recipe for the perfect fluffy yeast braid to deliver!



And yes, this yeast braid is made with potatoes! Believe it or not, it really can’t be beat in terms of fluffiness and juiciness, even on the second day it’s still nice and easy to eat, which can’t always be said for yeast cakes! 250 g potatoes (I like to use floury)

200 ml milk

½ yeast cube

500 g of wheat flour

100g sugar

1 tablespoon vanilla extract

1 teaspoon zest of an organic lemon (to taste)

100g soft butter

2 tablespoons heavy cream

1 egg yolk

Sugar hail for dusting

Recipe for the Perfect Fluffy Yeast Braid - Classic Yeast Braid is easy!

Cook the potatoes until soft, which is best done the day before, put the flour, sugar, salt, lemon zest and vanilla in a bowl and stir. Heat the milk very warm and add the yeast.

Peel the potatoes and pass them through the potato press. Add the potatoes, the yeast mixture and the very soft butter to the flour and knead with the food processor for about 5 minutes, as soon as the dough comes off the edge, it is finished and can be covered for an hour.

Briefly knead the dough again, shape it into three parts, form strands and braid them into a braid. Cover and steep for 30 minutes. Preheat the oven to 180 ° C upper and lower temperatures.

Beat the egg yolk with the cream and spread the braid with it. Sprinkle with icing sugar if desired and bake for 35-40 minutes until golden brown. Let cool on a wire rack.
