There are, for example, lemon donuts or cheesecake, and of course the classic should not be missing, especially if it is the best recipe in the world: the juicy lemon cake with yogurt. It’s really nice, “crunchy”, loose and juicy, you are sure to like it!



And above all: it mixes in an instant. You always have the ingredients in the house, so there is absolutely nothing to stop you from jumping into the kitchen and getting started. You can bake this fabulous cake in a small Gugelhupf pan or loaf pan, whatever you want, I’m the Gugel type!

Ingredients for a loaf pan (24 cm) or a small pan

225 grams of flour

2 teaspoons of baking soda

1 pinch of salt

250 g Greek yogurt

150 grams of sugar

3 eggs

Zest of two organic lemons

1 teaspoon vanilla extract

120 ml rapeseed oil

Glaze:

Zest of an organic lemon

3 tablespoons lemon juice

150 g icing sugar

Preheat the oven to 175 ° C (convection 150 ° C). Grease the loaf pan or Gugelhupf pan with butter.

Mix the yogurt with the sugar, add the eggs little by little, keep stirring. Rub the lemon peel and add, as well as the vanilla extract and rapeseed oil, mix everything. Now add the dry ingredients flour, yeast and salt and Stir very carefully with a spatula so that the ingredients are almost connected. Do not stir too much, otherwise the dough will be too firm.

Pour batter into prepared skillet and bake in preheated oven for 50 to 60 minutes. Perform a toothpick test.

Let the cake cool in the pan for 10 minutes, then carefully remove it from the pan and place it on a wire rack to cool.

Prepare the glaze and spread the cake with it, let it dry again for at least 20 minutes and serve.

You can simply put the rest of the lemon juice in sealable bottles and put them in the refrigerator. Then use it for cooking or baking.
